Winter tire set up

I got a set of 350z touring rims (18×8 30mm offset) for a winter set up. Just wondering what you guy would recommend for tire sizes as im terrible with tire set ups.
 
Would a 225/60/18 cause any rubbing issues? i kind of want a little more side wall for the winter/spring with all the pot holes around here
 
Also with a 30mm offset your rims will extend around 17mm's out from where they are stock.
