Should there be one spring and one fall (or late summer/early fall)? And make it 2 large events spread out evenly per year instead of one large spring and mini meets here and there?

That dim sum bill is detailed! Here in NYC, they still use the old fashion "number stamp" method. Does chicago have hot ladies pushing the dim sum carts too?
