how do I turn off the speed sensitive volume?

click on SETTINGS, then AUDIO, then keep SCROLLING DOWN.

it's weird becuase I don't have that option, yet my volume still goes up and down depending on my speed.

You need to turn it off. You probably changed the sensitivity only
