FYI
Last night I noticed while the car was idle, temperature gauge indicator close to H . Fans were on, coolant fine. Because this was an emergency I took it this morning to the dealer.
They found out that the thermostat was defective. Replaced.
Not related, but preventive, they also suggest me to change serpentine belt (auch!! that's was expensive) because it has cracks.
Hope help you guys!! In case happens to any of you.
I got the overheating problem first time last summer, the AC was not cooling sufficiently as well and this was the trigger to this troubleshooting initially, I did the following:
1) checked the functionality of the electrical fan, the coolant temperature sensor, the thermostat, .... etc, basically, all checked out but problem remained.
2) changed the coolant several times, just to make sure all old coolant is out. It improved but problem essentially remained, I had once to pull over off the high way and reverse a few dozens of meters because I missed a small exit, the gauge went almost past the H, and I had to shut off the engine to cool it off - when reversing, there is much less air flow coming through the radiator, once back I had to change the coolant again fearing that it lost its properties.
3) finally, on a nice day, I decided to pull the radiator and see what is in there, and I got this:

The condenser was not as bad as the radiator, but bad enough to contribute to the clogging of the air flow magnificently, anyway, after a thorough cleaning job with compressed air and water, here is how the radiator looked like:

After that, I never had the overheating problem again, the AC cooling improved very much, not as much as I would want but way better than before.
So check your radiator, there might be some dirt stuck in between the radiator and the condenser that restricts the air flow and causing engine overheating.
Hope this helps
