Engine temperature climbs at high speed when AC on

Today while my AC was on, I accelerated hard and reached 160 mph, this was the first time I do this, the last gear took a while to change and the rpm reached 6,000, it was only a few seconds till I saw the engine temperature rise and almost hit the max mark. I had to slow down for the temperature to go back to normal (at the middle).

I always do this while my AC is off, and the temperature was always stable at the middle and the gear change was smooth, the rpm would not reach 6,000.

So is this normal? Any thoughts will be appreciated.
 
From my understanding, the AC compressor should cut off under full throttle. It's pretty standard on most cars and on Nissans. So before you never hit 160mph? How long did it take you to hit 160mph?
 
Actually, to be accurate it was not quite 160 mph, it was 145 mph.
And yes, without AC I get to that speed in around 25-30 seconds knowing that I do not usually take off aggressively. If I do then I am sure I will get there in a shorter time.

My car has gotten old and aged badly, I can see and feel that it is time to really let is go.
