Been hitting some amazing scotch as of late. Been wanting splurge on something nice, this just arrived....

Intake - slight oak and agave, finishes like water with a hint of pepper, some of the best the best tequila I've had. Excellent neat with a small squeeze of fresh lime in the tumbler.

Yesterday I made my signature Midori Coladas. Technically on non alcoholic diet ... so only holidays and occasions are a good excuse to have a drink or two :)

This is the best Scotch I've had, ever. Perfectly balanced, peaty but not log sucking style.

In college we would only drink ever clear after we were drunk to make ourselves throw up.

Everclear is a touchy thing. It's either a nice alchy amp or gasoline nastiness.
Here is my all time favorite Everclear drink.
    Orbit and Go Naked
    1.5 ounce Everclear
    4 ounce cold beer
    2 ounce Sour Mix
    1 splash Grenadine
Mix in a highball glass and stir well.

Sounds funky, but it be gooood.

I actually really like it. I broke the barrel in with some port, then aged some rum in it, and now I'm on to bourbon. The cool thing is that due to the relatively high surface area to liquid ratio, everything ages about 10 times faster than in a traditional barrel. I actually just bought one for my brother as well.

The rum turned out really well, just enough smokiness to make it different. The bourbon will be interesting to take a relatively young, 6 year, bourbon and take it to the equivalent of 10 years.

If anyone has thought about buying whiskey stones, think again. I got some as a gift, tried, them and wasn't impressed. They work a little but its hard to justify the effort in my opinion.
Crap, now that I'm thinking about it I'll have to give them another try.
